Summer’s Bounty

Nothing screams summer more than fresh fruit and veggies. Go beyond a wedge of juicy watermelon or a slice of a bright, red tomato and check out some of our favorite ways to enjoy the best of the summer produce stand.

Watermelon Juice: Easily one of the tastiest ways to hydrate in the summer, watermelon juice is super simple to whip up. Wash a ripe watermelon and slice it in half. Scoop the watermelon chunks into a blender with the juice from ½ of a lime and blend until it’s completely broken down and watery. Pour the juice through a fine-mesh strainer to catch the seeds and pulp. Serve over ice with a spring of fresh mint or add a splash to a glass of sparkling wine for a summery cocktail.

Tomato Salad: Each summer our grandparents would buy baskets of ripe New Jersey tomatoes to freeze and use all winter long. But they’d always be sure to save a few fresh ones for this summer staple. Wash and cut 3 medium-sized tomatoes into eight wedges each, toss with thinly-sliced red onions. Sprinkle with extra-virgin olive oil, salt and black pepper and a few pieces of torn basil. Serve as is or pair with grilled fish, chicken or shrimp.

Grilled Peaches: If you’re not familiar with grilled fruit, you’re in for a treat! Wash and halve one peach per person. Lightly brush the flesh and skin with melted coconut oil. Place flesh side down directly on the hot grill and cook for 2-3 minutes until slightly charred. Flip and cook for an additional minute. Top with a dollop of vanilla yogurt, a sprinkle of toasted coconut and fresh raspberries. Serve immediately. Hint: We like grilled peaches, but plums or nectarines will work just as well.
